This isn’t your typical garlic butter sauce – this one really infuses as much robust garlicky flavor as possible. In this special rendition of the sauce, we start with some Smoked Garlic Confit, and incorporate that into this delectable sauce.

The result is an incredibly buttery, silky and rich butter sauce that pairs well with a wide variety of dishes, including seafood (such as shrimp or lobster), pasta, vegetables, and meats (such as steak or chicken).

It can also be drizzled over grilled or roasted foods or used as a dipping sauce for bread & crackers.

Confit is a French cooking technique in which food is cooked slowly, at low temperatures, usually within some type of oil or fat. It’s similar to the low & slow smoking technique that’s common in barbecues and it yields really tender and flavorful results.

This process is usually done with meats, but in this case, it’s done with garlic cloves.

  • 1 stick Butter (8 oz, Softened)
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Salt

But if you’re in a hurry and doing all of this from scratch, then here is the simple version to making easy garlic confit.

First, take a cup of peeled garlic and put it in an oven safe ramekin. Add in your thyme and submerge all of the garlic cloves in olive oil.

Set your oven to 250°F – and place your garlic in the center rack of the oven for about 25 minutes.

How To Make Garlic Butter Sauce

In your food processor, combine 1 stick of softened butter, your black pepper, garlic salt and 1 cup of garlic confit.

Blend all ingredients until smooth.

Take your blended compound garlic butter and put it in the middle of a 10″x10″ sheet of plastic wrap. Then, carefully roll the plastic wrap around the butter mixture and keep wrapping until you get to the end of the plastic wrap sheet.

Then grab the two ends of the plastic wrap at the end of the butter mixture (leaving about a 1 inch gap) and slowly roll the lump of butter back towards you to create a natural & even twist in the wrap.

This should create the initial log shape. Then apply a little bit more downward force as you roll the butter to even out the log and create a nice and smooth cylinder shape.

Place your tied log in the refrigerator for about 1 hour for it to harden.

Then, when ready to use, simply slice into small medallions and place it on any meat, pasta or seafood dish to accentuate it with a rich and umami flavor.
