Brussels Sprouts vs Brussel Sprouts
The terms “brussel sprouts” and “brussels sprouts” refer to the same vegetable, but the correct and widely accepted term is “Brussels sprouts.” The vegetable is named after Brussels, the capital city of Belgium, where it is believed to have been cultivated since the 16th century. Therefore, the correct spelling includes an “s” at the end of “Brussels.” But in everyday use, many people as use “brussel sprouts” to refer to this vegetable as well.

Prep Your Brussels Sprouts
Start by thoroughly washing your brussels sprouts.

Then cut off the ends, slice each sprout in half and then add them to a large mixing bowl and set aside.

To your mixing bowl of cut sprouts, add in your brown sugar, balsamic vinegar, Smoked Caramelized Bacon and Traeger Veggie Rub with Garlic & Herb.

Craft Your Balsamic Vinegar Reduction
In a small sauce pan, pour in your balsamic vinegar, honey and white sugar. Give it a good mix and then heat over low heat until it comes to a gentle simmer.

Continue to cook until it reduces about 20% of the original volume and the liquid becomes thick & sticky. Then remove from the heat and set aside.

When your smoker comes up to temperature, place your cast iron skillet directly onto the grill grates of your smoker.
Let it smoke for about 45 minutes, giving the sprouts a stir every 15 minutes. (Your smoke time will vary depending on the consistency of your smoker, so be sure to keep a close eye on your sprouts.)

Once the brussels sprouts have caramelized to a dark golden brown color, remove from the smoker grill and drizzle some balsamic vinegar reduction on top.
