What is Oxtail Meat?

Oxtail is the tail meat of a cow. In the past, oxtail meat really came from oxen, but nowadays, this cut of meat is taken from the thick upper portion that forms a cow’s tail. It is highly nutritious and rich in collagen from the connective fats and bone marrow in the region and it has a very tender and even silky texture when cooked properly. The Equipment Needed

Braising The Oxtail

In order to build the perfect Truffle Oxtail Pizza, you need craft my amazing Braised Oxtail dish (we use the shredded meat from that recipe directly on this pizza). So make sure you reference that to cook the oxtail meat properly, and then return to this recipe to complete the oxtail pizza.

Once you’ve made the braised oxtail, set aside for it to cool to a warm temperature that you can handle. Then start pulling apart and shredding the meat by hand and accumulate in a large bowl. Set aside.

Craft the Oxtail Pizza Sauce

In my braised oxtail recipe, we made a gravy by blending the marinade/juices used to braise the oxtail. That nice and thick gravy will be the pizza sauce for this oxtail pizza recipe. Make sure you go and make the sauce, then return here to complete this oxtail pizza recipe.

The Pizza Dough

Having a soft and chewy pizza dough is the foundation to a great oxtail pizza.

You can use any store-bought, pre-made pizza dough – or if you’d like to make your own dough from scratch, check out the recipe for my Homemade Pizza Dough.

Once you have your dough, make sure you roll it out onto a nice and sturdy pizza stone, like the Nuwave Pizza Stone and let it sit for about 5-10 minutes to proof.

Prepping The Oxtail Pizza

Pre-heat your oven to 525 degrees °F.

On your rolled out pizza dough, ladle on your oxtail pizza sauce using a circular motion, coating the entire dough surface with the sauce, except for a 1/2 inch crust at the edge of the dough.

Then cover the sauce with shredded mozzarella cheese and then top with the shredded oxtail meat.

Next, give the edge of the pizza crust a quick brushing with truffle oil, and slide your pizza into the middle rack of your pre-heated oven.

Close the oven door and let the pizza bake until the cheese has fully melted and the crust starts to become golden brown (about 8-12 minutes).
